How to make Raspberry Cheesecake Brownies

  1. Preheat your oven to 350°F (175°C). Grease and line a baking dish with parchment paper.
  2. Prepare Brownie Base: In a mixing bowl, combine melted butter and granulated sugar. Stir until well combined. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract. In a separate bowl, sift together flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Prepare Cheesecake Layer: In another bowl, beat together the egg, cream cheese, sugar, and flour until smooth.
  4. Assemble: Spread the brownie batter evenly into the prepared baking dish. I used an 8 x 8-inch baking dish. Pour the cheesecake mixture over the brownie batter, spreading it evenly.
  5. Add Raspberries: Gently press raspberries into the cheesecake layer.
  6. Bake: Bake in the preheated oven for approximately 35-40 minutes or until a toothpick inserted into the center comes out with moist crumbs (not wet batter).
  7. Cool and Serve: Allow the brownies to cool completely in the baking dish. Once cooled, lift the parchment paper to remove the brownies from the dish, and cut them into squares.
