Nothing this simple should taste this good. Four ingredients, two minutes, no cooking. Affogato is proof that Italians understood long ago that the best desserts don’t need a recipe, just good ingredients and perfect timing.

The name means “drowned” in Italian, and that is exactly what happens. A shot of espresso goes over cold vanilla ice cream, and for about thirty seconds you get hot and cold, bitter and sweet, firm and melting, all in one spoonful. Chocolate drizzle and chopped hazelnuts turn it from a coffee-shop afterthought into something you would be proud to serve guests.

Ingredients needed:

Serves 1. Scale up by the glass.

  • 2 scoops vanilla ice cream
  • 1 shot (about 30 ml) hot, strong coffee from a moka pot, freshly brewed
  • 1 tablespoon melted dark chocolate, for drizzling
  • 1 tablespoon hazelnuts, toasted and roughly chopped

With so few ingredients, each one does real work. Use a good vanilla ice cream, ideally one with visible vanilla seeds and a high cream content, because it has to stand up to the espresso rather than dissolve into a puddle. A moka pot makes exactly the kind of coffee this needs: strong, hot and concentrated. A watery coffee makes a watery affogato, so fill the basket properly and don’t rush it. For the chocolate, melt a few squares of 60–70% dark chocolate in short bursts in the microwave, or use a quality chocolate sauce if you are short on time. Toasting the hazelnuts for a few minutes in a dry pan makes them noticeably nuttier and crunchier.

How to make Affogato

  1. Chill your serving glasses in the freezer for at least 10 minutes. A cold glass buys you precious extra seconds before the ice cream collapses.
  2. Melt the chocolate and toast the hazelnuts, if you haven’t already. Have them within arm’s reach; once the coffee comes up there is no time to go looking.
  3. Scoop two balls of vanilla ice cream into each chilled glass.
  4. Put the moka pot on the stove last, right before serving. Take it off the heat as soon as the coffee starts to gurgle, so it is as hot as possible and never bitter.
  5. Pour the hot coffee straight from the moka pot over the ice cream. Do this at the table if you can; the sizzle and the first swirl of melting cream are half the pleasure.
  6. Drizzle the melted chocolate over the top and scatter the hazelnuts.
  7. Serve immediately with a small spoon, while the coffee is still melting into the ice cream.

Tips and variations

Espresso machine instead? A single shot of espresso is the classic and works just as well; pour it the moment it is pulled. Instant espresso powder dissolved in a little boiling water is an honest backup; filter coffee is too thin and will just make coffee soup.

Swap the ice cream. Vanilla is classic because it lets the coffee lead, but fior di latte, hazelnut gelato or a salted caramel ice cream all make excellent affogatos. Chocolate ice cream turns it into a mocha.

Swap the toppings. Crushed amaretti biscuits, flaky sea salt, a dusting of cocoa, or a spoon of whipped cream all work. Pistachios or almonds can stand in for the hazelnuts.

Make it grown-up. A splash of amaretto, Frangelico or Baileys poured over with the espresso turns dessert into a nightcap.

Serving a crowd. Scoop the ice cream into chilled glasses ahead of time and keep them in the freezer. Brew a large moka pot right before serving and let guests pour their own: it is far more fun than plating it in the kitchen.

Storage. There is none. Affogato is made to order and eaten in the next two minutes, which is exactly the point.
